Sourced from premier vineyards in the Venezie.

WINEMAKING
100% Pinot Grigio. Whole cluster Pressed, 100% Tank Fermented, Aged Surlie for three months, no Malolactic Fermentation. The grapes are harvested at different brix levels to maximize the varietal character and to contribute the best flavor profiles of the varietal from our vineyard sites.

WINEMAKER AND PHILOSOPHY
True to his California winemaking roots, winemaker Robert Lawson is mastering the blend of the old and new world with Pavi Pinot Grigio Italy. Veering in style from traditional Italian Pinot Grigio Pavi Italy has more weight in the palate, giving the wine a robust feel, while keeping the varietal character, resulting in a perfect balance of acidity and citrus flavors. 

TASTING NOTES
Grown and produced in the lush region of Venezie, Italy, this Pinot Grigio is a perfect compliment to its California cousin, Pavi Napa Valley. This robust and fruity wine is crushed and pressed to ferment cold in order to preserve the delicate aromas of orange blossom, lemon, pear and pineapple flavors. This wine is balanced and refreshing to pair with cheeses, light summer pastas, spicy Asian dishes or seafood.

As the winemaker for PAVI WINES, Rob Lawson seeks to “capture the true varietal and regional character of the varietal by pairing New World technology with traditional techniques” to create wines that are both fruity and robust in flavor and texture.

TASTING NOTES
This is a refreshing, everyday wine. The floral aromas of melon, pear and pineapple, are complemented by delicate flavors of fig and lemon. The finish is balanced and crisp with a lingering taste of pineapple and citrus. It is a delicious accompaniment to fish, seasonal pasta dishes and chicken, or a perfect glass of wine for a hot summer day!

The focus of the winery is to use Italian varietals, combined with the California climate and winemaking techniques that will enhance the true characteristics of the particular varietal.

TASTING NOTES
Enjoy one of Northern Italy’s most popular varietals: Dolcetto is a lush, medium/full-bodied wine, rich with bright raspberry and cherry aromas.  The intense flavors of blackberry and spice come together in a balanced wine that is a perfect compliment to meats, pasta and pizza!  It is a great everyday wine!
