It is hard to believe that Harvest is here and we're already
full into crush! We have an addition to the Pavi team this
season. Florencia Pererya joins us from The Vines of Mendoza
in Argentina. She is assisting Rob and learning the production

Crush has provided us with many surprises this Harvest. On
the outset it has all the earmarks of being a slow growing
season, but with temperatures spiking in late August, picking
started much earlier than expected. As this letter reaches
you, all of the Pinot Grigio grapes have been crushed and
are in fermenting in tanks. We will be harvesting Dolcetto,
Cabernet and Sangiovese over the next few weeks. Even though
this year seems to be producing fewer yields than last year,
the earlier ripening appears to be providing much superior
fruit. We are finding balance and robust flavors in the grapes,
and expect a spectacular 2007 vintage.
Fall has us looking forward to the release of the first vintage
of our Super Tuscan - Il Babbo: a blend of Sangiovese and
Cabernet. With bright blackberry and cherry flavors from the
Cabernet and earthy red berry characteristics from the Sangiovese
this is a perfect, full-bodied and balanced wine. With less
than a 200-case production we look forward to sharing this
special wine with you.
